I can't find the poem and I don't know the poet's name but it is a children's poem.
Away down south by the Southern Sea
An elephant sits in a cinnamon tree.
He's a thousand miles from the nearest town...

Fossicking in Google hoping to find that poem for you, I didn't succeed, but did learn unexpectedly that cinnamon trees are regarded as good trees to sit in (I don't believe I've ever seen one), and did come across another "Elephant Poem" for children, which I cannot forbear to share:
Way down South where bananas grow.
A grasshopper stepped on an elephant's toe.
The elephant cried with tears in his eyes-
Pick on somebody your own size!

I am also looking for "An elephant sits in a Cinnamon Tree" - I do know one line that is next is "he can't go up and he can't go down".
The same children's book has another poem I an looking for "There Is a Cow called Milky Moo, She lives down by the shed. She has a little spotted calf, with horns upon his head" - or something like that. Any help would be appreciated.
